Costa Rican "Light" Agua de Sapo

INGREDIENTS

SERVES 4-6
  • 2 litres water
  • 24 T-Sugars Light Cubes
  • 125g fresh ginger, coarsely chopped or to taste
  • 240ml fresh lemon juice

DIRECTIONS

Bring the water to the boil. Add ginger and T-Sugars Light Cubes and cook until the cubes have dissolved and the ginger infuses the water (usually about 20 minutes). Allow to cool completely. Strain using a sieve or fine-mesh colander. Add fresh lemon juice and serve over ice.
