Pear Sparkler

INGREDIENTS

SERVES 5
  • 240ml pear juice (preferably fresh-pressed)
  • 5ml lemon juice
  • T-Sugars Hard Cubes (not broken in half)
  • 180ml honey
  • 1 sprig of rosemary or thyme
  • 28g fresh ginger, sliced or to taste
  • Pinch of nutmeg
  • Ice
  • Club soda or seltzer water

DIRECTIONS

Add the pear and lemon juices, T-Sugars Hard Cubes, honey, rosemary, ginger and nutmeg in a small saucepan over medium heat. Boil, then reduce heat to a simmer and allow to cook for 4 minutes, or until the sugar cubes are completely dissolved. Remove the pan from heat and allow to cool; mixture will become syrup-like. Strain using a sieve or a fine-mesh colander. When ready to serve, fill a glass about half-full with ice and add 45ml of the pear syrup. Fill the remainder of the glass with club soda or seltzer water and stir.
